Ingredients:
- 200g cooked shredded chicken
- 150g udon noodles
- 1 medium cucumber, thinly sliced
- 1 tbsp sesame seeds
- 2 scallions, sliced
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 tsp honey
- 1 tsp sesame oil
Cooking Time: 20 minutes

Instructions:
- Cook udon noodles according to package instructions. Drain and rinse under cold water.
- In a small bowl, whisk together soy sauce, rice vinegar, grated ginger, honey, and sesame oil to make the dressing.
- In a large bowl, combine shredded chicken, sliced cucumber, udon noodles, and scallions.
- Pour the dressing over the salad and toss gently to combine.
Sprinkle with toasted sesame seeds before serving.
