Ingredients:
- 2 halibut fillets (approx. 150g each)
- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp fresh thyme
- Lemon wedges for serving
- Salt and pepper to taste
Cooking Time: 35 minutes

Instructions:
- Preheat oven to 425°F (220°C).
- Toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper. Spread on a baking tray and roast for 20 minutes.
- Meanwhile, place halibut fillets on a lined baking sheet. Drizzle with remaining olive oil, minced garlic, thyme, salt, and pepper.
- Add halibut to the oven and bake for 12-15 minutes, or until fish flakes easily with a fork.
- Serve halibut with roasted sweet potatoes and lemon wedges.
