Ingredients:
- 4 eggs
- 1 tbsp mirin
- 1 tbsp soy sauce
- 1 tsp sugar
- 2 tbsp dashi broth (optional)
- Oil for pan
Cooking Time: 15 minutes

Instructions:
- Beat eggs in a bowl, add mirin, soy sauce, sugar, and dashi broth. Mix well.
- Heat a rectangular or non-stick pan over medium heat and lightly oil it.
- Pour a thin layer of egg mixture into the pan and cook until nearly set.
- Roll the layer gently from one side to the other with a spatula or chopsticks.
- Move rolled egg to one side of the pan, pour another thin layer of egg mixture, lifting the rolled egg to let liquid spread under it.
- Cook, then roll again, repeating until all egg mixture is used.
- Remove from pan and slice into bite-sized pieces. Serve warm.
