Ingredients:
- 2 chicken breasts
- 1 cup multi-grain rice blend
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 2 carrots, chopped
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Cooking Time: 40 minutes

Instructions:
- Preheat oven to 400°F (200°C).
- Toss bell pepper, zucchini, and carrots with 1 tbsp olive oil, thyme, salt, and pepper. Spread on a baking sheet.
- Place chicken breasts on the baking sheet, drizzle with remaining olive oil, season with salt and pepper.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
- Meanwhile, cook multi-grain rice according to package instructions.
- Serve baked chicken over rice with a side of roasted vegetables.
